Chiawa Camp’s fusion of flavors are completely unique where we utilize local ingredients to enhance and compliment a vast array of internationally inspired dishes. Keeping our feet firmly planted in Zambia, we have created healthy, flavorful and nourishing plates whilst championing our local farmers.

Our Exec Chef frequently visits the local markets and suppliers together with our specialized buyer. Always on the lookout for seasonal produce and ways to engage, support and uplift our Zambian producers, especially from Zambezi Harvest, a co-op of village farmers from whom we prioritise the supply, at fair trade prices, of herbs, vegetables and fruits.

Each member in our team of chefs is individually unique but as a collective, so well balanced in what they produce. Each one utterly proud of their strengths but yet so humble and excited to learn a new skill.

Early morning breakfasts are small bites and pastries around the morning fire with the option to grab and go so you can get into the bush as early as possible.

Lunches are typically a showcase of vibrant and nutritious salads prepared with the freshest seasonal ingredients as well as our chef’s daily specialty dishes.

Four course dinners are elegantly plated classics, infused with a local flair and flavor as well as plant-based wellness options unique to Chiawa Camp.

Tasty bits and bites are specially prepared to nourish you between meals and out on your activities.

But where Chiawa Camp truly excels is how and where it serves its meals, often at surprise locations and always memorable. Bush BBQ’s, unforgettable nights under the stars showcasing traditional Zambian cuisine and culture. Lazy barge lunches drifting on the mighty Zambezi creating a once in a lifetime experience.

If one asks how the meals differ between Chiawa Camp and Old Mondoro, where guests often visit both on the same safari, Chiawa Camp’s menus are more a fusion of different cuisines, old and new, compared to Old Mondoro which tries to keep to more traditional safari style.

The food, especially the bread, is some of the best we have had anywhere in the world. The beauty and even more so, the intimacy, of Old Mondoro will have you planning your next trip before you leave.

5 star accommodation with excellent food at every meal.

Sumptuous meals - a great variety and we had 3 surprise eating spots - won't spoil it for others but it was 5 star.

Dietary requirements are graciously and imaginatively accommodated.
