Meals at Old Mondoro are cooked from the heart, where traditional and home-cooked flavours have evolved for modern tastes and to meet and exceed the demands of the top quality safari camp that it is.

Fresh fruit and veg are sourced from Zambezi Harvest, a village cooperative group that farms on the banks of the Zambezi River. Other ingredients are sourced by our specialist buyer in Lusaka who follows our request that all ingredients are purchased from as close to home as possible, and from best in Zambia suppliers.

Menus are individualized to guests’ dietaries and prepared by our talented team of home-grown chefs, with each meal detailed by Madelein. Think of the most delicious home made breads and creative, crunchy salads; whilst appetising gluten-free and dairy free meals are prepared with a flourish.

In order to avoid repetition but maintain high standards across the Chiawa Safaris collection of safari camps, each season menus are updated, checked and realigned – as a common goal, we aim to have healthy meals that are rich in flavour, yet presented differently.

Under the stars or in the middle of the bush

Early morning breakfasts before activities are in a relaxed setting around the fire place over looking the Zambezi. Hearty oats porridge is in a potjie pot along with toast and filtered coffee from the camp fire; and a continental buffet, with muffins, fresh fruit and other tasty items, are served from the traditional Mokoro (check out the episode about this on Renovation Wild).

Lunch is served family style and is consists of a protein, 2 beautiful salads, and different breads daily. Afterwards, a refreshing sorbet or cheese platter is served.

A plated dinner is served under the stars, near the fire place. These are generous, rich and hearty comprising of a hot soup, a choice of main course, and a dessert or cheese platter.

In between meals, for those peckish moments, snacks are kept bite size and healthy, for the most part. But who can resist a creamy scone or decadent chocolate cake at tea time?
